¡Welcome, Bienvenidos!


Welcome!
Since I can remember, I’ve believed that one must enjoy the important moments in life, thanking God for the life he gives us, and especially the moments where we sit down with our family to share a meal and enjoy the delicious food that our mother has prepared with love.
My mother was always cooking for us, and we never lacked good food, even though in our house there were never many groceries. She always devised ways to give the entire family food to eat.
I’ve thought that even though we never had delicacies, banquets or gourmet food, it is still important to share with our families healthy and nutritious meals, using the ingredients offered by the Pachamama, or Mother Earth.
When I was barely seven years old, I was already helping my mother cook, whether it was by carrying firewood, lighting the fire, filling the pot with water, peeling potatoes or doing other chores. My mother taught me step by step how to cook our traditional recipes.
The dream of my own kitchen began when I was a teenager, about to start studying at a high school specializing in hotel management and tourism. There, I learned to prepare simple dishes. Those years were very exciting, and I fell in love with my course of study. I went on to attend college, where my dream of starting my own restaurant was born.
I come from a very humble family, who taught me to fight. Throughout my childhood, I wanted things that my parents could not give me, and I did not want my siblings to suffer the same way. For this reason I began to dream of my project, with the sole objective to help my family and my community.
With these reflections and memories in mind, I want to give credit to some wonderful people: the professors at my university, and especially Anita Taft, who has helped me over the years to achieve my dream little by little.
Five years ago, the Tandana Foundation and Deer Hill Expeditions gave me a trip where I traveled with young people from the U.S., and this is one of my fondest memories. I even wrote a travel book which I never published.
I remember our travels to Cuenca, Baños, the eastern part of Ecuador, and finally my own community, Panecillo. There we made the first quimbolitos, which everyone loved. From that time on, I have worked with the Tandana Foundation by holding cooking classes, and all the groups that have come have greatly enjoyed the food.
My dream is to open a traditional culinary school open to the public, for anyone who wants to learn to prepare our local dishes with all natural ingredients and regional customs, so that tourists (both national and international) can enjoy these unique dishes.
These pages represent an homage to and recognition of the culinary wealth of my Ecuador, which ranges from simple flavored water to a variety of dishes. The diversity of the products given to us by our Pachamama (Mother Earth), combined with our culture, makes Ecuador a country rich with unique South American cuisine.

¡Benvenido(a)!
Desde que tengo uso de razón he crecido creyendo que hay que disfrutar de los momentos más importantes, agradeciendo a Dios por la vida que nos regala, aún más  al momento de sentarse conjuntamente con nuestra familia a compartir  la mesa y  de disfrutar la deliciosa comida que mamá prepara con mucho amor. 
Lo admirable es que siempre nos daba cocinado nunca faltó la buena aunque en la casa no había compras hechas, ella se ingeniaba para darnos de comer a toda la familia.
He pensado que aún que no disfrutemos de los mejores majares, banquetes o comida gourmet es importante compartir con nuestra familia una comida sana y nutritiva con los productos que brinda nuestra Pachamama (Madre Tierra).
Cuando apenas cruzaba los siete años ayudaba a mi mamá a cocinar ya sea llevando leña, prendiendo fuego (tulpa), pasando olla con agua, pelando papas entre otras cosas, ella me iba enseñando paso a paso a cocinas nuestra comida ancestral.
El sueño de la buena cocina se inicia cuando cruce cuarto curso al momento de ir a estudiar en un colegio de Especialidad Hotelería y Turismo, donde aprendí elaborar platos muy sencillos, pero fue muy emocionante estos años, yo me enamoré de mi carrera, posteriormente pase a ingresar a la Universidad donde empezó mi sueño de ser una gran empresaria montar un restaurante.
Yo vengo de una familia muy humilde que me enseñaron a luchar, desde mi infancia he sufrido queriendo muchas cosas que mis padres no pudieron complacerme, pero no quiero que mis hermanos sufran de la misma manera, por tal razón empecé a soñar con mi proyecto que tiene un solo objetivo ayudar a  mi familia y por qué no a mi comunidad.
Después de estas pequeñas reflexiones y recuerdos, quiero rendir mi diferencia especial a aquellos seres maravillosos: mis profesores en la Universidad como también quiero nombrar a la persona que me ayudo a lograr poco a poco mi sueño ella es Anita Taft quien desde hace mucho años me ayuda a cumplir mis sueños.
Hace 5 años la Fundación Tandana y Deer Hill me obsequiaron un viaje de convivencia con jóvenes de estados unidos, es uno de los más lindos recuerdos que tengo, hasta hice un libro del viaje que nunca publique.
 Recuerdo que viajamos a Cuenca, Baños, Oriente y por ultimo llegamos a mi comunidad Panecillo, donde hice los primeros Quimbolitos y a todos les gusto. Desde ese tiempos vengo trabajando con la Fundación  TANDANA dando clases de cocina, a todos los grupos  les ha gustado mi comida. 
Mi sueño se proyecta a la creación de una Escuela Gastronómica Ancestral  abierta a todo público, que quiera aprender a preparar nuestros platos típicos con productos 100% naturales y milenarios de nuestra región, para que los turistas nacionales e internacionales puedan degustar de estos platos únicos.
Estas páginas representan el homenaje  y reconocimiento a la riqueza gastronómica de mi país Ecuador, que se manifiesta a través de una simple agua aromática a una diversidad de platos, la lista es muy extensa. La pluralidad de los productos que se da en nuestra pachamama (nuestra tierra) conjuntamente con nuestra cultura  hace de  Ecuador un país rico en gastronomía único en el Sudamérica.
“Los poetas llegan con su mensaje al corazón, nosotros los cocineros convertimos los productos  que ofrece la tierra y preparamos los mejores manjares  que serán inolvidables  en sus memorias y se enamoraran de su buen paladar.”
